Ingredients for Badsahi Khichdi Recipe

# Ingredients
1. 1 cup rice
2. 1/2 cup pigeon pea
3. 1 large potato, cut into large piece 1 inch
4. 2 medium onions cut into large piece 1 inch
5. 1 ½ cup cauliflower florets
6. 1 cup brinjal (eggplant), cut into large piece 1 inch
7. 1 cup flat green beans split into two halves
8. 1 cup green peas shelled
9. 1 cup green pigeon pea shelled
10. 1 medium tomato, chopped
11. 6 – 7 cloves garlic, chopped
12. 2 green chili, Chopped
13. 3 tbsp oil
14. ¾ tbsp cumin seeds (jeera)
15. ¾ tbsp muster seeds
16. ½ tbsp Turmeric powder
17. 1 tbsp red chili powder
18. ½ tbsp cumin powder
19. ½ tbsp coriander powder
20. ¼ tbsp asafoetida
21. 1 bay leaf
22. 4 black pepper
23. 2 cloves
24. Salt to taste
25. Green coriander leaves, chopped

Steps of Badsahi Khichdi Recipe

# Steps
1. For khichdi, mix the rice and pigeon pea in a bowl and soak it for half an hour. Drain it and place them in a pressure cooker with 3 cup water, ¾ tbsp turmeric powder and salt and cook up to 3 whistles. Open the lid and place it aside.
2. Heat the oil in a pan, add cumin seeds and muster seeds. When seeds crackle add asafoetida, bay leaf, black pepper, cloves and garlic. Mix it well.
3. Add onion and green chili and sauté for three minute. Add all the vegetables, beans, turmeric powder, cumin powder, coriander powder, red chili powder, salt and mix well.
4. Close the lid of pan and cook it for 10 to 15 minute while stir in between.
5. In a large Pan at the bottom make a layer of khichdi. Over that arrange layer of cooked vegetable curry layer. Repeat the process 2nd time.
6. Cover the lid and Heat the pan for 5 minutes and swich off the flame. Add lots of fresh coriander and ghee.
7. Serve hot with yogurt and ghee.
